2. 果蔬风味的释放与强化技术
3. 生物抗菌剂与果蔬、肉制品保鲜

主要从事生物活性肽(燕麦、荞麦)和多糖(枸杞)的结构与健康功效研究、生物抗菌剂研究,在计算机模拟与分子营养方面也有深入研究。
共主持包括国家自然科学基金项目、教育部、北京市级项目、宁夏回族自治区重点研发计划项目16项;
在研项目为枸杞叶多糖结构与健康功能、环脂肽在果蔬和调理肉制品的保鲜作用研究;在国内外学术期刊累计发表学术论文65篇,包括SCI论文45篇;
发表论文涉及食品科学领域多个TOP期刊,包括Carbohydrate Polymers, Food Hydrocolloids, Food Chemistry等。
获授权发明专利6件。北京食品学会、美国营养学会(ASN)会员。
